This is one of my favorite starch based vegan cookbooks available at Jocelyn’s Etsy store which is Vegan4GoodStore.

Here is a sample recipe from her book.


4 cups veggie stock
3 cups water
8 ounces artichoke hearts
2 potatoes, diced
1 large onion, deiced
Juice of 2 lemons
1/2 pounds of mushrooms, sliced

Simmer for 40 minutes or so until vegetables are soft
