Well, that was a successful day of recipe testing! Everything looks yummy! I also follow Madeleine and enjoy her laid-back style, funny husband, Alex, and cute dog, Roxie.
I learned that method of roasting potatoes from my husband’s Irish Aunties, and also have a “Potato” recipe book from England which heats the oil first, and then adds the parboiled potatoes, and then roasts. The Aunties would always shake the parboiled, drained potatoes in the lidded pot before adding them to the oil, which would result in a fluffy skin texture, which gets all nice and crispy and crunchy in the oven.
If you haven’t already featured ElaVegan’s blog recipes, she has some really great ones. We think her Butter Chickun recipe is amazing and easy, and I make it quite often, served with basmati rice or naan. We use soy curls, but she also has the option of using chickpeas. She adds coconut milk, a good balsamic vinegar, soy sauce, cilantro and fresh spinach at the end of cooking and the depth of flavour in the finished curry is so very good.👏🤩

You could blend up some of the soup and add it back to the pot to get it thicker.

Maybe try Plantifully Based? She has a channel here on YouTube and came out with a beautiful cookbook this past year.

I have followed Madeleine Olivia for a while now. I have not tried her recipes as of yet. she makes a lot of good looking stuff. Especially on holidays. I got the first comment this time : )

Madeleine Olivia has two e-cookbooks out, that I absolutely adore! Nothing fancy or frou-frou recipes and the ones I make regularly are very tasty. Thank you two for shining a light on a great vegan.
