One Pan Burrito 🌯 (Quick, Easy, Vegan Recipe!)

We LOVE ourselves a burrito. Rice – good, beans – good, cheese – good. And here we’ve thrown in some delish vegan chicken bits too. Spices tie everything together wonderfully, and some coriander, hot sauce and a squeeze of lime top it off. Perfection!

This recipe has a twist, because instead of serving all the individual elements and assembling, we have everything ready in one pan! Just scoop it into a tortilla and you’re good to go. If you hate washing up multiple serving bowls, this might be the burrito hack for you.

Ingredients:
2 tbsp vegetable oil
1 small red onion
1 garlic clove
320g vegan chicken
35g smokey mexican seasoning
1 tsp tabasco sauce
2 250g pouches microwavable basmati rice
1 400g tin black beans
1 200g tin sweetcorn
30g coriander
2 limes
Salt and pepper to taste
50g vegan cheese
2 small avocados
1 baby gem lettuce
2 tomatoes
16 medium flour tortillas

Peel and finely dice the red onion | Peel and grate the garlic | Cook the rice according to packet instructions | Rinse the black beans and sweetcorn | Pick the coriander leaves and finely slice the stalks | Halve the limes | Grate the vegan cheese | Cut the avocado into small chunks | Halve, core and shred the lettuce | Dice the tomato

Cook the filling | Warm the oil in the pan over medium heat | Add the onion and a pinch of salt and stir for 2-3 minutes | Add the garlic and coriander stalks and stir for 1 minute | Add the vegan chicken, mexican seasoning and tabasco and stir for 2-3 minutes | Add the rice, black beans and sweetcorn and stir to combine | Add the coriander, squeeze over the juice from one of the limes and stir to combine | Taste and season with salt and pepper | Sprinkle the cheese over the dish, put the pan in the oven and grill for 1 minute to melt the cheese

Sprinkle the avocado, lettuce and tomatoes over the filling | Squeeze over the lime juice

Time to serve | Warm the tortillas in the microwave according to package instructions | Take the pan and the tortillas to the table so you and your guests can build your own burritos

I feel like adding rice to a burrito is just stacking carbs and rice doesn't enhance the other tastes as much. Otherwise, seems nice!
