A Vegetarian Fall Harvest Soup

This soup can be make with either pumpkin or squash puree and you favorite seasonal vegetables to make a hearty soup that will warm you up during the cold nights ahead.

Recipe Ingredients:
2 TBSP Vegetable oil
1 Yellow onion
3 medium carrots
4 cloves of garlic
2 cups Vegetable Stock
1 Ear of corn
16 ounces of pumpkin or squash puree
1/2 cup oat milk
Spices to taste: salt, pepper, cumin, garlic powder, and chili powder
2 TBSP Herb Mix (rosemary, oregano and thyme)
~1 TBSP Maple syrup
