Ingredients
crusty baguette
egplant filets
fried Italian peppers
ripe heirloom or beefsteak tomato
arugula
vegan cream cheese

Eggplant Filets
Ingredients
1 large egplant
vegan egg replacer to replace four eggs*
bread crumbs
olive oil for frying

Fried Italian Peppers
Ingredients
8 Italian frying peppers
olive oil for frying

Instructions
Fried Italian Peppers
In a skillet over medium heat, heat up about 1/2 cup olive oil. When it is hot, place the peppers in the hot oil after you have cut them in half and removed the seeds, membranes, and stems.
Cook til browned on both sides.
Remove from pan, place in a heat proof container, and pour in the oil.
Refrigerate unused portion.

Eggplant Filets
Slice eggplant into half inch thick slices. Peeling is optional.
Sprinkle the slices with salt, place in a colander, and allow the salt to draw off juices and bitterness for thirty minutes.
Rinse slices well and lat dry.
In one shallow container, prepare your egg substitute. In another, add bread crumbs.
In a skillet, heat some olive oil (the amount is up to you) over medium heat. When it is hot, dip the eggplant slices in the vegan egg, coat in the bread crumbs, and cook the filets slowly, til both sides are well browned.
Remove from pan and place on a wire rack to drain.

The Sandwich
Cut a section of the baguette the same length as your eggplant filet. Cut it in half lengthwise, and hollow the top slice a little. Save the bits for bread crumbs.
Drizzle both sides of the bread with a little of the pepper infused olive oil.
Spread vegan cream cheese on the bottom slice, then put fresh Arugula, a thick slice of tomato, the eggplant filet, some of the fried peppers, a sprinkle of salt, and the top layer of bread.
Enjoy!

*VeganEgg, Ener-G, Bob’s Red Mill egg replacef, garbanzo bean flour, or flour and water paste will work.
