🌱 30 DAYS OF VEGAN 🌱 Red Cabbage and Broccoli Dal

We are officially halfway through! Day 15 is a seasonal and easy dal that’s perfect timing as the weather has turned arctic today! The warming spices will keep you nice and cosy!

Serves 4

Prep: 20 minutes
Cook: 50-55 minutes

2 tbsp oil1 head of broccoli, cut into florets1 tsp each of garam masala, turmeric, cumin, coriander and chilli powder (plus extra for sprinkling on the broccoli)
Salt and pepper
1 large onion, finely chopped
Half a small red cabbage, finely shredded
2 garlic cloves, gratedThumb of ginger, grated
300g yellow split peas, rinsedZest & juice of a lemon500ml of vegetable stock400ml tin of coconut milk

Serve with
Handful of coriander, roughly chopped
Rice or naan

1. Pre-heat the oven to 190Β°C. Tumble the broccoli into an oven dish and toss with half the oil, and a good pinch of the garam masala, cumin, chilli and season. Roast for 15-20 mins until slightly golden. Remove and set aside for later.
2. Heat the remaining oil in a large pan, and add the onion, cabbage and garlic. Fry for about ten minutes until the onions and cabbage have softened.
3. Add the spices and ginger to the pan and gently heat for a couple of minutes, stirring through.
4. Stir in the split peas, stock and coconut milk, and bring to a boil. Reduce the heat to a simmer, cover and cook for about 35-40 until the lentils have softened.
5. Top with the roasted broccoli, lemon juice, zest and coriander.
